50% Cabernet Sauvignon & 50% Syrah Aged 24 months in foudre and barrels.
This wine develops similarities in structure and finesse to Bordeaux from the Médoc whilst being as dense and dark as Northern Rhône reds. Rich and exuberant red and dark fruits on the palate. The finish is liniear and focussed with a distinctive white pepper lift. This wine can be enjoyed now thanks to fine tannins and lovely fruit but will reward a few years of cellaring.
The wine is grown on Limestone and clay soil, very stony: Hauterivian et Barremian, second stage of the lower Cretaceous, less than 130 million years. In the winery, the was no de-stemming, or adding of yeast or sulphur. Aged for 24 months in foudres and barrels. Fining with fresh egg white. No filtration before bottling.
