Picked early to retain bright, natural acidity. The grapes were pressed quite hard to extract phenolics, which help create the chalky texture. The palate is moreish with lively acidity and a savoury briney finish. The seaspray and minerality of this wine is unmistakeable. This is a refreshingly dry wine with a moderate level of alcohol.
Matured in stainless steel. No finings were used. Sourced from the Chalmers Vineyard in Heathcote.
