What the Critics say
Hand-picked from the Chalmers Vineyard, whole-bunch pressed with a long pressing cycle to extract some phenolic material, 30% fermented in used barrels, matured for 10 months. The approach has worked well, especially with the low alcohol and controlled phenolics complementing the lemon skin/sea shell flavours that are also at work.
Picked early to retain bright, natural acidity. The grapes were pressed quite hard to extract phenolics, which help create the chalky texture. The palate is moreish with lively acidity and a savoury briney finish. The seaspray and minerality of this wine is unmistakeable. This is a refreshingly dry wine with a moderate level of alcohol.
Matured in stainless steel. No finings were used. Sourced from the Chalmers Vineyard in Heathcote.
