- Harvesting by hand with a strict selection process ; the whole harvest macerates for two months. Partial destemming.

'A big, rich and massively endowed wine is the 2009 Gigondas Prestigue des Hautes Garrigues. About as hedonistic as Gigondas gets, with overflowing notes of cassis, black raspberries, garrigue and spice, it hits the palate with full-bodied richness, sweet, sweet tannin and a stacked mid-palate. I doubt it will be as long lived as the 2010, but it will offer incredible amounts of pleasure over the coming 10-15 years.'
