Reduction flattens the underlying fruit but there is fine freshness, intensity and detail to the muscular and concentrated big-bodied flavors that possess excellent depth on the stony, lingering and austere finish that is dry but not hard to aggressive. The vines where the grapes comes from, are located on Pernand Vergelesses, Aloxe Corton and Ladoix Serrigny Villages, northern Côte de Beaune. Grown on clay and limestone, south and south eastern exposure. The grapes are harvested and sorted by hand. They are lightly pressed then in a pneumatic press at a low pressure to get a slow and gentle extraction. After a gentle racking of the must, the wine is put in French oak casks of 228 liters (30% of new oak) for both of alcoholic and malolactic fermentations with wild yeasts during 18 months.
