Tasting Notes: Aromatics of Turkish delight, quince and orange blossom. The palate is sensual, robust and balanced with honey glazed apricot sweetness, lychee and balanced by juicy natural acidity. A dessert wine which is not cloying but generous of flavour and life.
Source: Beaconsfield Vineyard 6 years old Viticulture: The fruit comes from Beaconsfield vineyard situated a stones throw from the Tamar river which moderates its growing season, so it is long and cool. With a speckled spring there was some hen and chicken allowing the fruit to obtain a very high sugar with low yields and concentrated flavour.
Winemaking: Fruit was brought into the winery in late April. The fruit was crushed and destemmed to small open fermenters and allowed to cold soak for five days being plunged with dry ice regularly. The dry ice acted as an oxidative blanket whilst also exploding the skin cells and releasing all the flavours! The fruit was then pressed and frozen before the juice was separated from the ice. It was then fermented to approximately 100 grams of residual sugar and halted.
CGR: 100 grams residual sugar. The wine was bottled in September 2024.
