    First pressing Chardonnay, sourced exclusively from grands crus vineyards “Côte des Blancs”. An amazing blend of 25 reserve vintages, going all the way back to 1985! The wine spends 4 years on lees, then a further ten months ageing in the bottle after disgorgement. The delicacy of the bubbles helps to tame the naturally mineral Grands Crus to offer a sensation that is both creamy and lively. A very old winemaking method is used where fermentation in the bottle is less powerful than traditional champagne. The dosage is a very low 5g/L. Base 2015 and disgorged in October 2020

    Sourced from the fruit of 36 family-owned plots in Oger and Mesnil-sur-Oger, the NV Blanc de Blancs Grand Cru is very fine and intense on the clear, precise and perfectly ripe nose, with lovely brioche and aromatic fruit notes. Beautifully intense but refined and highly elegant on the palate, this is one of the finest Blanc de Blancs I have had from Bruno Paillard in the past five years. This is so gentle, pure and chalky, with a long and intense but clear, crisp and salty finish. This is absolutely fabulous in its terroir reflection and great delicacy with beautiful length.

    Bruno Paillard

    The vineyard worked by Maison Bruno Paillard is the result of a very patient quest; a quest which has relied on a deep knowledge of the Champagne region and a very precise vision for the resulting wine. Bruno Paillard was born in 1953 into an old Champagne family of growers and brokers. He founded his eponymous Champagne house in 1981 and quickly gained international recognition, although it is relatively small in size. Considered to be a négociant, he owns 32 hectares of vines in 15 villages, including Oger, Le Mesnil, Verzenay and Bouzy. The house follows many organic principles, with some parcels using biodynamics. The wines are aged on the lees for a long time, and barrels are used sparingly (in about 20% of the production). Only the juice from the first pressing is used, and most wines complete their malolactic fermentation. Bruno Paillard’s style is elegant, fresh and delicate, with a pinpoint mousse and low dosage. Today, Alice Paillard, his daughter, runs the business.
