Description
Only 700 bottles produced. Rich ‘white gold’ in colour. A complex wine, with aromas of lemon zest, lanolin, and baking spices. Perfumed wild jasmine, snow pea tendril, delicate hints of candied peel and lemon curd. There is a nuttiness, with notes of green apple and native blossoms. A medium-bodied wine, of great textural interest, with fruit ripeness extending the length. Taut, crisp acid drives the wine and will reward those with the patience to cellar.
Domenica Estate Chenin Blanc is organically grown at 450m on Beechworth’s famous granite soil. The 13 rows of Chenin Blanc were recently grafted onto vines planted in 2006. These are the closest vines to our winery on a south east facing slope. The fruit was crushed, pressed, then racked to oak for a wild yeast fermentation in seasoned French barriques. Malolactic fermentation was inhibited. Bottled after 12 months aging on lees. Unfiltered.
