    Description

A bright, zesty chardonnay from a cooler, lower-yielding year.

The nose gives ripe orchard fruits, white peach delicate blossom and a touch of steely minerality. Juicy red apple and stone fruit dominate the palate, with hints of almond meal and subtle toasty spice. Great freshness and energy in the mouth, with lively acidity and a long savoury finish.

The aim is to produce a Chardonnay that is fruit-expressive, structurally complex, textural and flavoursome. We achieve this style by picking fruit with classic flavour profiles and high natural acidity. Our premium fruit is gently basket pressed, then fermented in new and seasoned French oak barrels, for spontaneous malolactic conversion and maturation in barrel on lees. These characteristics are a natural extension of our dry-land farming practices and other benchmark practices adopted from the Côte de Beaune.

    Description

Sourced from two sites: the cooler, eastern end of our dry-grown north-facing main block; and a single vineyard site in Gruyere. Fruit was hand-picked, lightly crushed then gently basket pressed, with the resulting free run and lightly pressed juice sent to tank for cooling. Chilled juice was transferred French oak barrels (36% new) for fermentation with a selected yeast culture. Matured in oak for 12 months with light lees stirring. No fining or filtration.

    ABOUT THIS BRAND

    Pimpernel

Pimpernel is one of the few fully dry-grown vineyards in the Yarra Valley. We firmly believe that winemaking begins in the vineyard, and employ traditional viticultural practices to cultivate low yields of intensely flavoured fruit. In the winery, we embrace minimal intervention winemaking to produce elegant and individual wines that express our terroir.

From the start we’ve taken inspiration from the great wine regions and traditions of France. We cultivate a range of grape varieties, including Pinot Noir, Chardonnay, Shiraz, Grenache, and Chenin Blanc. In recent years, we've embarked on an exciting vineyard expansion including new varieties including Sangiovese, Cabernet Sauvignon, and Nebbiolo. These new varieties speak to our commitment to innovation while honouring the traditions that have shaped our winemaking journey.
