    An extraordinary and unconventional food rosé wine. A wholly individual and totally delicious xinomavro rosé, light salmon in colour, with flavours of dried cranberries, blood orange and wild strawberries with cedar spice. Three months in very large barrels brings creaminess without oak flavour. Made from Apostolos Thymiopoulos' young vines harvested in October. The vines are located at Trilofos and Fytia at the southern tip of Naoussa appellation at between 180 and 450m, where they are influenced by cooling winds that blow down from Mount Vermio in warm summers. The wine is given three months in oak barrels to give that creamy palate.

    Apostolos Thymiopoulos goes against the rule that rosés should only be consumed fresh, creating a mature rosé from Xinomavro that has been aged for about two years. The result vindicates him, especially when paired with food.
    Description

    Sourced from high-altitude, non-irrigated young vines (450–650 meters) planted on schist and granite soils, cooled by mountain winds from Mount Vermio. Hand-harvested grapes undergo a 12-hour cold maceration followed by wild yeast fermentation. Aged briefly in large, second-use oak barrels to build texture and a creamy mouthfeel without strong oak flavors.

    Apostolos Thymiopoulos is without a doubt the rising star of Naoussa. In the past decades he has worked with local growers and at the same time has forged out an expression of Xinomavro that shows this variety in a modern light. His understanding of natural winemaking is evident, yet the wines maintain a clean, fresh elegance and purity of fruit, that’s delicious! His vines, cultivated according to biodynamic methods at an altitude of 180m in the southern sector of theappellation, are blessed with a good amount of sunshine. The terrain is comprised of Naoussa’s most geologically complex soils, containing limerich marlstone, schist and granit.
