Serrat: A Catalonian word meaning high density planting. Serrat has 6,600 vines per hectare, producing less than one bottle of wine per vine.
Serrat is a family-run vineyard in Yarra Valley, founded by renowned winemaker Tom Carson and his wife Nadège. Known for their ultra-high-density plantings and precision winemaking, Serrat produces limited, estate-grown wines that reflect the true character of their site. With a diverse mix of varieties, Pinot Noir, Chardonnay, Shiraz, Grenache, Nebbiolo. The wines are vibrant, textural, and highly sought after. Considered a cult winery in Australia, Serrat has a strong following and a waiting list for its coveted membership.
Vigneron Tom Carson – who was the 2023 Halliday Viticulturist of the Year – has long been revered within the industry, with James Halliday noting, “As well as being a consummate winemaker, Tom has one of the best palates in Australia and a deep understanding of the fine wines of the world.”
They have close planted (at 6600 vines/ha) 1.4ha of pinot noir, 0.77ha of shiraz, 0.4ha of chardonnay, 0.3ha of grenache, 0.28ha of nebbiolo, 0.12ha grenache blanc, 0.8ha each of malbec and mataro and 0.6ha of viognier. As well as being a consummate winemaker, Tom has one of the best palates in Australia and a deep understanding of the fine wines of the world, which he and Nadège drink at every opportunity (when they aren’t drinking Serrat). -JAMES HALLIDAY
