    The same blend and wine as the Première Cuvée but held back another four and a half years following disgorgement, this release is the 2014 vintage. A golden straw hue, the NV Champagne Cuvée 72 Extra Brut takes on more layered aromas and is expressive with notes of mandarin, shortbread cookies, honeycomb, and red apple. Full-bodied, with a rounded mouthfeel, it’s long on the palate and has a clean finish. It picks up a light savory side from this vintage but is a wonderful example of how these wines age with time in the cellar and shows off the consistency of this cuvée. Drink Now-2030.

    Bruno Paillard

    The vineyard worked by Maison Bruno Paillard is the result of a very patient quest; a quest which has relied on a deep knowledge of the Champagne region and a very precise vision for the resulting wine. Bruno Paillard was born in 1953 into an old Champagne family of growers and brokers. He founded his eponymous Champagne house in 1981 and quickly gained international recognition, although it is relatively small in size. Considered to be a négociant, he owns 32 hectares of vines in 15 villages, including Oger, Le Mesnil, Verzenay and Bouzy. The house follows many organic principles, with some parcels using biodynamics. The wines are aged on the lees for a long time, and barrels are used sparingly (in about 20% of the production). Only the juice from the first pressing is used, and most wines complete their malolactic fermentation. Bruno Paillard’s style is elegant, fresh and delicate, with a pinpoint mousse and low dosage. Today, Alice Paillard, his daughter, runs the business.
