    18.5 Points, JancisRobinson.com "Assyritko from ungrafted old vines. At first this was all texture – bright and crunchy, almost effervescent in feel with a tangy grapefruit-pith grip. An hour later, it was gorgeous – sandy, salty, herbal and slightly vegetal, but not quite filling out its imposing structure. Day two was the clincher, the wine showing super-saline and stony but balanced by a broad leesy richness with an undertow of umami-kelpy flavour propelled by powerful acidity. It’s a big wine wine but not overwhelming – and man, would it like a salty, fatty lamb chop if you chose to open this now. Drink 2025-2040"

    100% Assyrtiko. 70- to 80-year-old ungrafted vines with over 300-year-old root system, at 50–250 m. Cold soaking on skins for 12 hours at 10 °C prior to fermentation in tank with selected yeasts. No malo. Aged 6 months in tank with frequent lees stirring. TA 5.66 g/l, pH 3.12, RS 2.11 g/l. Vegan.
